Ingredients
2 cans garbanzo beans--rinsed 1 can diced tomatoes (I prefer petite) 1 chopped onion 2 minced clove garlic 2 handfuls tortilla chips Organic corn preferred 2 handful arugula leaves rinsed spices: salt, pepper, red chili powder, tumeric, garam masala A little EVOO (Extra Virgin Olive Oil) and a bit of butter
Cooking Instructions
Heat oil and butter in bottom of pan Add onion and garlic--sautee until onion is translucent Add rinsed garbanzo beans In food processor add tomatoes, arugula and chips, process until blended, add in pot Add spices and 1 to 2 cans of water Simmer on medium heat for 20 minutes
