Ingredients
Coconut scrapped - 1 cup Rice - 3 tsp Cardamom - 2 Milk (boiled and cooled) - 1/2 cup Jaggery - 1 cup (adjusted according to sweetness) Cashew nuts and Raisins - few Ghee - 2 tsp
Cooking Instructions
*Soak the rice for 45 mins in water. *Grind the coconut and the rice into a paste by adding little water. *Boil 1/2 cup of water and add jaggery in it. Stir it till it gets dissolved. Filter the jaggery water so that all the impurities are removed. *Take a heavy bottomed kadai, pour in the mixture of coconut and rice and add around 2.5 cups of water.Boil well. *Cook this in low flame for 10 mins and stir continuously. *Once this is cooked, slowly add the jaggery syrup and cardamoms. *Boil well till it thickens a bit. Remove from Flame. *Fry cashews and raisins in ghee and add to this Kheer. Finally add the milk and serve.
